The proSONIC-R is an intelligent portioning machine with ultrasonic cutting technology designed for fixed weight portioning of cheese.  The machine incorporates an integrated weigh-scale, which is used to pre-weigh round cheese and then portion it for optimum results - maximising yield and minimising giveaway.

Each cheese is assessed individually and an optimum number of cuts determined for the current sequence.  The ultrasonic cutting head performs a radius cut - cutting from the centre outwards.  This means that the machine is not restricted to an even number of cuts like some conventional machines or wire cutters, which means improved performance.

Fundamental to the process is a centralising and stabilising unit, which ensures that the cheese is in absolutely the right position at the start of the cutting sequence, and is then maintained around this centre point - a crucial feature to ensure portion control is not compromised.

The machine is designed to meet high hygiene standards, and food-safe materials and stainless steel are used throughout.  Polycarbonate panels ensure safety and acoustic standards are met. The equipment is ideal for low to medium output operations which demand a configurable and easy-to-use machine with all the benefits of ultrasonic cutting. It is a perfect fit for cheeses which can exhibit variable weight and cannot easily be cut with conventional systems sometimes resulting in poor yield, unacceptable giveaway or quality issues.

Ultrasonic cutting involves high frequency sound waves being generated through a sonotrode oscillating at 20,000 times per second (20kHz). The sound waves are concentrated and evenly distributed along the leading edge of the sonotrode, thereby creating a very effective and unique cutting system. The amount of movement (amplitude) can be varied to suit the product, normally varying between 40 and 80 microns. The generator is housed in the rear control panel and provides the power to the titanium sonotrode via a stainless steel housed transducer and booster.
